Grilled Cheesy Chicken Bites with Pineapple Salsa



I love coming up with little dishes, based on what I have in the cupboards and fridge, and I always find food tastes better if it's presented well. I decided it would be fun to do a little food series, to throw some of my ideas out there.

This was a fun little dish from the other day.

Grilled Cheese, Spinach & Chicken Toasts with Pineapple Salsa


Ingredients: 

For Chicken Toasts

1 small half chicken breast cubed (I tend to freeze a bunch of chicken so I can just pull out a bit and soak it in hot water to defrost right before I decide to cook, that saves having to plan ahead)
1 Onion diced
1 Clove Garlic diced
1 tbsp Canola Oil
Handfull of Spinach
Salt and Pepper to taste
Grated Cheese of your choice
Baguette or other bread

For Pineapple Salsa

1/4 Pineapple cubed or a few canned pineapple rings cubed
1 tbsp fresh Cilantro 
Juice of 1/2 a Lime
1/2 a small onion chopped really fine
Salt to taste

Directions:
Fry up chicken with onion, garlic, oil in a pan until cooked. Place chicken on pieces of bread and add spinach and grated cheese. Toast till cheese melts. Combine all ingredients of salsa and serve fresh!
