Quinoa Pumpkin Salad

My friend, Mel, made a root veggie quinoa salad that I just loved. So I attempted something along those lines. This turned out so delicious!!

Quinoa Pumpkin Salad

Ingredients:
Quinoa (cooked with 1 part grain to 3 parts water - once boiling simmer for 15 minutes and drain)
Pumpkin or other root veggie (Baked for 45 minutes at 400 with olive oil, rosemary, salt, pepper, onion and garlic)
Feta Cheese chopped
Cranberries
Beet Root chopped (pickled or else roasted)
Cashews or Pine Nuts
Salt & Pepper (to taste)
Olive Oil
Balsamic or Red Wine Vinegar
