Quinoa Salad

I've been really into Quinoa lately. It's great for so many different things and so healthy!!
This salad is an idea from the BC Seasonal Cookbook... although I changed it up slightly.


1 cup Quinoa (Cook on the stove in 3 cups of water, once brought to a boil simmer for 15 minutes then drain and cool)
1/2 an Onion (red would taste better but whatever you have is great)
Corn Kernels to taste
1/2 a cup Cranberries (dried or fresh)
1 Apple chopped
Fresh parsley
Juice of one Lemon
1/2 cup Cashews
1 cup Celery chopped
1/3 cup Orange Juice
1 tbsp Apple Cider Vinegar
1 tbsp Olive Oil
Salt and Pepper to taste
Drizzle of Honey

Mix all together and serve!!
